Vegan Lebanese Cake with Carob Molasses, Tahini, and Oriental Spices

Ingredients
  • 290g whole wheat flour
  • 20g baking powder
  • 225g extra virgin coconut oil
  • 1 vanilla
  • a pinch of salt
  • 2 tbsp tahini
  • 250g carob molasses
  • 200g spiced black tea (anise/cardamom/cinnamon/ginger/clove)
  • 50g sesame seeds
Preparation
  1. In a large bowl, mix the flour with salt, baking powder, and vanilla.
  2. Melt the coconut oil and combine it with carob molasses, tahini, and tea.
  3. Combine both mixtures and beat with a mixer for about 2-3 minutes.
  4. Line the bottom of a 20x30cm baking pan with two overlapping pieces of parchment paper to cover the sides.
  5. Spread the mixture in the pan and sprinkle with sesame seeds.
  6. Bake for 45 minutes at 170 degrees, checking with a toothpick. Add more time if needed.
