Tripe Soup

Ingredients
  • 600/700 g tripe
  • 300 ml broth
  • 300 ml fresh milk
  • 2 cloves garlic
  • salt to taste
  • black pepper to taste
  • 1 tbsp flour
  • 1 tbsp paprika
  • 50 g butter
  • Note: The broth and fresh milk can be different ml from those specified
  • it is important they are 1:1.
Preparation
  1. Boil the tripe and cut it into pieces.
  2. Strain 300 ml of the broth and mix it with 300 ml of fresh milk, then add the chopped tripe and the two cloves of garlic.
  3. Place the mixture on the stove and bring it to a boil.
  4. In a separate pan, sauté the flour and paprika in the butter, then add it to the pot.
  5. Ensure the paprika does not burn, as it will become bitter.
  6. Optionally, garnish with chili and crushed garlic.
