red cabbage – 150 g

cherry tomatoes – 200 g

spinach or green salad – 100 g

olive oil – 3 tbsp

lemon juice – 2 tbsp

tahini – 2 tbsp

black pepper – 1/2 tsp
Preparation
Rinse the quinoa and cook it in a 1:2 water ratio for about 15 minutes.
Drain and let it cool slightly.
Prepare the vegetables – grate the carrot, chop the cucumber, tomatoes, and avocado.
In a bowl, layer: quinoa → chickpeas → vegetables → greens.
In a small bowl, mix tahini, lemon juice, olive oil, salt, and pepper.
Drizzle the sauce over the bowl and serve.
