Zucchini with Minced Meat and Cheese

Ingredients
  • zucchini – 4 pcs
  • minced meat (beef or mixed) – 600 g
  • cheese (white brined) – 200 g
  • onion – 1 pc
  • garlic – 2 cloves
  • canned tomatoes – 300 g
  • olive oil – 2 tbsp
  • eggs – 2 pcs
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley – 1/2 bunch
Preparation
  1. Preheat the oven to 180°C.
  2. Slice the zucchini into rounds or strips.
  3. In a pan with olive oil, sauté the onion and garlic.
  4. Add the minced meat and cook until done.
  5. Add the tomatoes and spices and let simmer for 10 minutes.
  6. Layer the zucchini and meat in a baking dish.
  7. Beat the eggs and mix with the crumbled cheese, pour over the dish.
  8. Bake for about 30–35 minutes until golden brown.
