Ingredients
  • eggs – 8 pcs
  • avocado – 2 pcs
  • cherry tomatoes – 200 g
  • spinach – 100 g
  • olive oil – 2 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/3 tsp
  • parsley – 1/2 bunch
Preparation
  1. Beat the eggs in a bowl with salt and pepper.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the spinach and sauté for 1–2 minutes.
  4. Pour in the eggs and cook until they start to set.
  5. Add the chopped cherry tomatoes.
  6. When the omelet is almost done, add sliced avocado on top.
  7. Fold the omelet or leave it open, sprinkle with parsley, and serve immediately.
