Ingredients
  • 500 g flour type 550
  • 21 g yeast (1/2 cube)
  • 350 ml lukewarm water
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 5 tablespoons olive oil
  • dried herbs of choice
Preparation
  1. Dissolve the yeast in the water and add the sugar.
  2. Gradually mix in the flour (the easiest way is in a mixing bowl of a kitchen robot).
  3. Knead into a smooth dough, cover, and let rise for 1 hour.
  4. Add the olive oil, salt, and dried herbs (e.g., 1 teaspoon rosemary and 1 teaspoon oregano) and knead again, letting it rise for another two hours.
  5. Shape two ciabatta loaves on a floured tray, sprinkle lightly with flour, and let rise for the final time (about 30 minutes).
  6. Place in a preheated oven at 220°C and bake for about 20-30 minutes (depending on the oven). Enjoy!
