Zucchini Pasta with Cashew Sauce

Ingredients
  • zucchini – 4 pcs (spiralized)
  • cashews – 150 g (soaked)
  • garlic – 2 cloves
  • lemon juice – 2 tbsp
  • nutritional yeast – 2 tbsp
  • olive oil – 2 tbsp
  • water – 100 ml
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley – for garnish
Preparation
  1. Soak the cashews in warm water for 20–30 minutes (if not pre-soaked).
  2. Drain and blend with garlic, lemon juice, nutritional yeast, olive oil, and water until smooth.
  3. Season with salt and pepper.
  4. Spiralize the zucchini (or cut into thin strips).
  5. Lightly heat the zucchini in a pan for 2–3 minutes (to soften but remain fresh).
  6. Add the cashew sauce and mix well.
  7. Serve immediately, garnished with parsley.
