Ingredients
  • olives (green or black) – 400 g
  • olive oil – 3 tbsp
  • garlic – 2 cloves
  • lemon zest – 1 tsp
  • oregano – 1 tsp
  • thyme – 1/2 tsp
  • chili pepper – pinch (optional)
  • black pepper – 1/3 tsp
Preparation
  1. Drain the olives if they are in brine.
  2. Slice the garlic thinly.
  3. In a bowl, mix the olive oil, garlic, lemon zest, and spices.
  4. Add the olives and stir well.
  5. Let marinate for at least 30 minutes (or better a few hours).
  6. Stir before serving.
  7. Serve.
