Rice with Leeks and Olives

Ingredients
  • 1 cup rice
  • 1-2 stalks of leeks
  • 10-15 olives
  • olive oil
  • vegetable broth
  • parsley
  • salt
  • black pepper
Preparation
  1. Clean the leeks and chop them finely, then sauté in olive oil.
  2. Once softened, add the rinsed rice and fry until golden.
  3. Season with black pepper, salt, and parsley.
  4. Transfer to a baking dish and add 3 cups of warm water mixed with vegetable broth.
  5. Add the pitted olives.
  6. Bake at 180 degrees Celsius for about 30-35 minutes until a crust forms.
